“Three Light Summer Salad Recipes for 2020”

This summer, FOODNLA is featuring three summer salads that are light and refreshing. These salads will also help you stay cool. Here’s the scoop:

Rainbow Fruit Salad with Honey Lime Dressing (0:06)

The rainbow fruit salad with honey lime dressing is packed with citrusy and tart flavors. The ingredients for this salad are one pound of strawberries, two mangoes, four kiwis, two bananas, and 12 ounces of blueberries. For the salad dressing, mix one tablespoon of lime juice and two tablespoons of honey in a bowl. Also, maple syrup and agave nectar are some substitutes for honey. You can also add more fruit like raspberries and blackberries!

Peach Caprese Salad (with Balsamic Glaze) (0:56)

The caprese salad is traditionally prepared with tomatoes, basil, and mozzarella. Honeysuckle’s peach caprese salad recipe adds one more layer of flavors from the sweet peaches. The ingredients are one sliced peach, one sliced heirloom tomato, basil, and slices of mozzarella. Balsamic glaze is drizzled on top in a zig-zag pattern.

Tempeh Taco Salad (7:47)

The tempeh taco salad is a timeless recipe! For the salad, you will need 8 ounces of tempeh, some oil, 3 tablespoons of soy sauce, 2 teaspoons of garlic powder, 2 teaspoons of chili powder, 1 teaspoon of cumin, lettuce, tomatoes, black beans, corn, cilantro, red onion. (For the salad dressing, you will need one avocado, the juice of one lime, 1/4 cup olive oil, salt, pepper, and 3 to 6 tablespoons of water.) See the slideshow below:
